CHEESECAKES

Super quick and easy oreo cheesecakes perfect for summer and can be eaten like an icecream!

The main reason why I made this recipe was because of the really hot days in July when it reached 37C in the UK! So, I finally had time to make something but the last thing I really wanted to do was turn the oven on... so cheesecakes it was! The best thing about this recipe is that I've added at the bottom how I enjoyed eating them when it was so hot!

If you leave them in the freezer for a couple hours after they've set and eat them as soon as you take them out they taste so good, like ice cream but Better!!

Ingredients:

  • 20 Oreos + (optional) extra for the top :)

  • 3tbsp of butter 

  • 1 pack of Philadelphia Cheese (around 400g) 

  • Double Cream (300ml)

  • Vanilla extract (2tsp)

  • Icing sugar (300g)

METHOD:

  1. Fill a cupcake tin with 12 cupcake cases

  2. Using a bowl and rolling pin smash the 20 whole Oreos into crumbs (doesn't need to be perfect) 

  3. Melt the butter in a small microwave safe bowl and add it to the oreos 

  4. Divide this mixture up into the 12 cupcake cases and press down as much as you can before putting in the fridge while you make the actual cheesecake mix

  5. In a large bowl add in your cream cheese, icing sugar and vanilla extract and mix with a hand mixer or by hand

  6. In a separate bowl pour in the cream and whip, but go slowly so you don't overwhip it

  7. Finally fold in the whipped cream into the cream cheese mix trying to keep the most air in as possible 

  8. Now take out the Oreo bases from the fridge and fill and divide the cheesecake mixture between them and smooth on the top using a teaspoon 

  9. OPTIONAL: using any remaining Oreos, crush them and sprinkle some on the top for decoration

  10. Put the cupcake tin with your cheesecakes in the freezer and leave them for at least 2hrs or until they seem set. 

TIP: leave them in the freezer a bit longer and eat as soon as you take them out for it to be like ice cream, but better and cool you down on a hot day :)
